The Sisters' Cafe I was so grateful to have put off grocery shopping for one more day! I had a leftover liter of Sprite from when we were sick the week before and so I used it for the marinade. My whole entire family devoured this chicken! It is amazing! The Sprite or 7-Up gives it a little bit of sweetness and there is just the right amount of soy sauce to not overpower it. And the best part was that it was SO simple and really moist. Beings that it's winter here, I just broiled the chicken and it came out perfectly tender, moist, and delicious!
7 up Chicken Marinade from Melanie at The Sisters' Cafe
1 can 7up (or sprite)
1/2 cup soy sauce
1/4 cup canola oil
1 Tb horseradish sauce
1 tsp minced garlic
6 boneless skinless chicken breasts (I used chicken tenders)
Blend all ingredients and add chicken. ( I usually do this in a big zip loc bag) Let marinate over night or at least 6 hours, in your fridge. You can also marinate chicken then slice it into strips. Fry with onions and sweet peppers for fajitas.
