Soft Caramel Corn


Beware! Don't start...you may never stop! So we made this recipe tonight for our family home evening and I intended to only have a couple of bites---but oh how addicting this is. It is so, so, so good! Bret and I finally had to say, "Okay, this is really our last bite. Let's stop together". We could have eaten it all night. I got this recipe from my Brittney.

Soft Caramel Corn
2 C brown sugar
1 C white karo syrup
1 can sweetened condensed milk
1 cube butter (I used about 3/4 of the cube)
Cook the first three ingredients until sugar dissolved over low heat (it took a little bit to make sure it wasn't sugary/grainy). Then off the heat and add the butter (real butter makes it richer), when dissolved pour over popcorn. I just did a really huge bowl and filled it with air-popped popcorn. I also added some salt to the popcorn before the caramel and it tasted really good!

I am in the middle of making this right now and it is looking so yummy! I'm even contemplating eating it plain without the popcorn...I've tried a lot of your recipes and have loved every one. I think one of my favorites is the easy cream cheese chicken enchiladas. Thanks for sharing!!
